Ingredients:

  • 2 ripe avocados
  • 4 large eggs
  • 1/2 cup pomegranate seeds
  • 4 slices of your favorite bread (sourdough or whole-grain work well)
  • 2 tablespoons of white vinegar (for poaching eggs)
  • Salt and pepper, to taste
  • Olive oil, for drizzling
  • Fresh herbs (such as cilantro or parsley) for garnish (optional)

Description:

  1. Start by preparing the avocados. Cut them in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper to taste. You can also add a pinch of red pepper flakes for a bit of heat if you like.

  2. Toast your bread slices to your desired level of crispiness. Place them on serving plates.

  3. While the bread is toasting, poach the eggs. Fill a large saucepan with water and bring it to a gentle simmer. Add the white vinegar to the water, which helps the egg whites coagulate. Create a gentle whirlpool in the water by stirring it with a spoon, and carefully slide one egg into the center of the whirlpool. This will help the egg whites wrap around the yolk. Poach for about 3-4 minutes for runny yolks or a bit longer if you prefer them more set. Remove the egg with a slotted spoon and place it on a paper towel to drain. Repeat with the remaining eggs.
