Banh Mi

Ingredients:
For the Chicken:
- 1 pound boneless, skinless chicken breasts or thighs
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 1 teaspoon black pepper
For the Pickled Vegetables:
- 1 carrot, julienned
- 1 daikon radish, julienned
- 1/2 cup rice vinegar
- 1/2 cup water
- 2 tablespoons sugar
- 1 teaspoon salt
For the Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons Sriracha sauce (adjust to taste)
For Assembling:
- 4 French baguettes
- Fresh cilantro sprigs
- Sliced cucumber
- Sliced jalapeño (optional for heat)

Marinate the Chicken:
- In a bowl, mix together the minced garlic, soy sauce, fish sauce, sugar, vegetable oil, and black pepper.
- Cut the chicken into thin, even slices.
- Add the chicken to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best results).

Pickled Vegetables:
- Combine the julienned carrot and daikon in a bowl.
- In a separate bowl, mix the rice vinegar, water, sugar, and salt until the sugar dissolves.
- Pour the vinegar mixture over the vegetables and let them sit for at least 30 minutes. You can prepare these ahead of time and store them in the refrigerator.

Cook the Chicken:
- Heat a skillet or grill pan over medium-high heat.
- Cook the marinated chicken slices for about 2-3 minutes per side or until fully cooked and slightly charred.

Prepare the Sauce:
- Mix the mayonnaise and Sriracha sauce in a small bowl. Adjust the Sriracha to your preferred level of spiciness.

Assemble the Banh Mi:
- Slice the baguettes in half lengthwise.
- Spread the Sriracha mayonnaise on the inside of each baguette.
- Layer the cooked chicken on the bottom half of the baguette.
- Top with pickled vegetables, cucumber slices, jalapeño (if using), and fresh cilantro sprigs.
- Close the sandwich with the top half of the baguette.
