Banh Mi

Serving Size: This recipe makes approximately 4 Banh Mi sandwiches.

Ingredients:

For the Chicken:

  • 1 pound boneless, skinless chicken breasts or thighs
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon black pepper

For the Pickled Vegetables:

  • 1 carrot, julienned
  • 1 daikon radish, julienned
  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons Sriracha sauce (adjust to taste)

For Assembling:

  • 4 French baguettes
  • Fresh cilantro sprigs
  • Sliced cucumber
  • Sliced jalapeño (optional for heat)

  1. Marinate the Chicken:

    • In a bowl, mix together the minced garlic, soy sauce, fish sauce, sugar, vegetable oil, and black pepper.
    • Cut the chicken into thin, even slices.
    • Add the chicken to the marinade, cover, and refrigerate for at least 1 hour (or overnight for best results).
  2. Pickled Vegetables:

    • Combine the julienned carrot and daikon in a bowl.
    • In a separate bowl, mix the rice vinegar, water, sugar, and salt until the sugar dissolves.
    • Pour the vinegar mixture over the vegetables and let them sit for at least 30 minutes. You can prepare these ahead of time and store them in the refrigerator.
  3. Cook the Chicken:

    • Heat a skillet or grill pan over medium-high heat.
