Butternut Squash Soup

Ingredients:

  • 1 butternut squash (about 2 pounds)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 apples, peeled, cored, and chopped
  • 4 cups vegetable broth
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional toppings: toasted pumpkin seeds, a dollop of sour cream, or a sprinkle of chopped fresh herbs (like parsley or chives)

How to make the TastyBurp

  1. Start by preparing the butternut squash. Cut it in half lengthwise and scoop out the seeds and fibers. Then, peel the squash using a vegetable peeler. Cut the peeled squash into chunks.

  2. In a large soup pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 2-3 minutes until they become translucent and fragrant.

  3. Add the chopped carrots and apples to the pot. Continue to sauté for another 5 minutes, stirring occasionally.

  4. Add the butternut squash chunks, vegetable broth, ground cinnamon, and ground nutmeg to the pot. Stir well to combine. Bring the mixture to a boil.

  5. Once it's boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the vegetables are tender when pierced with a fork.

  6. Remove the pot from the heat and let it cool slightly. Then, use an immersion blender to puree the soup until it's smooth and creamy. If you don't have an immersion blender, you can carefully transfer the soup to a blender in batches and blend until smooth, being cautious of the hot liquid.

  7. Return the pureed soup to the pot and heat it over low heat. Season with salt and pepper to taste. If the soup is too thick, you can add a bit more vegetable broth to reach your desired consistency.

  8. Once heated through, serve the butternut squash soup hot, garnished with your choice of toppings like toasted pumpkin seeds, a dollop of sour cream, or a sprinkle of chopped fresh herbs.
