Easy Steak Tacos
Ingredients:
For the Steak:
- 1 pound (450g) of flank steak, skirt steak, or your preferred cut of steak
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil
For the Taco Assembly:
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1 cup grated cheese (cheddar, Monterey Jack, or your choice)
- Sour cream, salsa, and lime wedges for serving

Marinate the Steak:
- In a small bowl, combine the minced garlic, chili powder, ground cumin, smoked paprika, salt, black pepper, and vegetable oil.
- Rub the spice mixture all over the steak, ensuring it's evenly coated. Place the steak in a resealable plastic bag or a shallow dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Preheat the Grill or Skillet:
- Preheat your grill to medium-high heat or a skillet over medium-high heat on the stovetop. You want it hot to get a good sear on the steak.

Grill or Sear the Steak:
- If using a grill, oil the grates to prevent sticking. If using a skillet, add a small amount of oil to the pan.
- Grill or sear the steak for about 4-5 minutes per side for medium-rare, adjusting the time based on your preferred level of doneness.
- Transfer the cooked steak to a plate and let it rest for a few minutes before slicing it thinly against the grain.

Warm the Tortillas:
- While the steak is resting, warm the tortillas. You can do this by placing them on the grill for a few seconds on each side or by heating them in a dry skillet for about 20-30 seconds per side. You can also wrap them in a damp paper towel and microwave them for 20-30 seconds.

Assemble the Tacos:
- Lay out the warm tortillas.
- Place a few slices of the grilled steak in the center of each tortilla.
- Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and grated cheese.
