Fall Breakfast Hash
Ingredients
6 Slices Bacon - cut into chunks
1 Zucchini chopped
1 Onion chopped
3 C Butternut Squash cut into cubes
4 Large Eggs
Instructions
- In large skillet, cook bacon and onions over medium/high heat (stir occasionally) until bacon begins to crisp and onions are nice and tender. Put in bowl and set aside. Leave bacon grease in pan.
- Add butternut squash and zucchini to pan in an even layer. Cook over medium/high heat until browned and tender. (stir occasionally)
- Return the bacon and onions to the pan. Cook 5-6 more minutes.
- Make spaces for the eggs. Crack and put in eggs then cover. Cook eggs to how you like.
- Remove from heat. Salt and pepper to taste.
