Fall Breakfast Hash

Ingredients

6 Slices Bacon - cut into chunks

1 Zucchini chopped

1 Onion chopped

3 C Butternut Squash cut into cubes

4 Large Eggs

Instructions

  1. In large skillet, cook bacon and onions over medium/high heat (stir occasionally) until bacon begins to crisp and onions are nice and tender. Put in bowl and set aside. Leave bacon grease in pan.
  2. Add butternut squash and zucchini to pan in an even layer. Cook over medium/high heat until browned and tender. (stir occasionally)
  3. Return the bacon and onions to the pan. Cook 5-6 more minutes.
  4. Make spaces for the eggs. Crack and put in eggs then cover. Cook eggs to how you like.
  5. Remove from heat. Salt and pepper to taste. 
  6. Serve and enjoy that TastyBurp!
