Grilled Cowboy Steak

Ingredients:

  • 2 bone-in cowboy steaks, approximately 2 inches thick
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter
  • Optional compound butter:
    • 4 tablespoons unsalted butter, at room temperature
    • 1 tablespoon fresh parsley, finely chopped
    • 1 teaspoon fresh chives, finely chopped
    • 1/2 teaspoon lemon zest
    • Salt and black pepper to taste

How to get that TastyBurp

  1. Preheat your grill to high heat, around 450-500°F (230-260°C). Ensure the grill grates are clean and well-oiled to prevent sticking.

  2. In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, kosher salt, and black pepper to create a marinade.

  3. Pat the cowboy steaks dry with paper towels. Brush each steak generously with the herb and garlic marinade on both sides. Let the steaks sit at room temperature for about 30 minutes to marinate while you prepare the grill.

  4. Once your grill is hot and ready, place the cowboy steaks on the grates. Sear for about 4-5 minutes on each side for medium-rare, adjusting the time for your desired doneness. Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare, 140°F (60°C) for medium, 150°F (66°C) for medium-well.

  5. While grilling, occasionally baste the steaks with any remaining marinade for extra flavor. Rotate the steaks for a visually appealing grill mark pattern if desired.

  6. When the steaks reach your preferred doneness, remove them from the grill and transfer to a cutting board. Tent the steaks with foil and let them rest for 5-10 minutes. This allows the juices to redistribute and results in a juicier steak.

  7. While the steaks are resting, prepare an optional compound butter by mixing room-temperature butter, parsley, chives, lemon zest, salt, and black pepper in a bowl.

  8. Slice the rested cowboy steaks against the grain and serve on warm plates. Top with a slice of the compound butter for an extra burst of flavor.
