Pumpkin Spice Latte Pancakes

Ingredients:
For the Pancakes:
- 1 1/2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 cup canned pumpkin puree
- 1 cup brewed strong coffee, cooled to room temperature
- 1/2 cup whole milk
- 1 large egg
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
For the Maple Coffee Syrup:
- 1/2 cup pure maple syrup
- 1/4 cup brewed strong coffee, cooled to room temperature

Prepare the Pancake Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and all the spices (cinnamon, nutmeg, cloves, and ginger).

Make the Wet Ingredients Mixture:
- In a separate bowl, combine the pumpkin puree, brewed coffee, milk, egg, vegetable oil, and vanilla extract. Mix until well combined.

Combine Wet and Dry Ingredients:
- Pour the wet ingredients mixture into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay.

Heat the Griddle or Pan:
- Preheat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.

Cook the Pancakes:
- Pour 1/4 cup of pancake batter onto the hot griddle for each pancake.
- Cook until bubbles form on the surface, then flip and cook the other side until they are golden brown and cooked through. This should take about 2-3 minutes per side.

- In a small saucepan, combine the maple syrup and brewed coffee. Heat over low heat, stirring, until warmed through. Keep warm until ready to serve.
