Pumpkin Spice Latte Pancakes

Ingredients:

For the Pancakes:

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 cup canned pumpkin puree
  • 1 cup brewed strong coffee, cooled to room temperature
  • 1/2 cup whole milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

For the Maple Coffee Syrup:

  • 1/2 cup pure maple syrup
  • 1/4 cup brewed strong coffee, cooled to room temperature

Instructions:

  1. Prepare the Pancake Batter:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and all the spices (cinnamon, nutmeg, cloves, and ginger).
  2. Make the Wet Ingredients Mixture:

    • In a separate bowl, combine the pumpkin puree, brewed coffee, milk, egg, vegetable oil, and vanilla extract. Mix until well combined.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients mixture into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat the Griddle or Pan:

    • Preheat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  5. Cook the Pancakes:

    • Pour 1/4 cup of pancake batter onto the hot griddle for each pancake.
    • Cook until bubbles form on the surface, then flip and cook the other side until they are golden brown and cooked through. This should take about 2-3 minutes per side.
  6. Prepare the Maple Coffee Syrup:

    • In a small saucepan, combine the maple syrup and brewed coffee. Heat over low heat, stirring, until warmed through. Keep warm until ready to serve.
  7. Serve:

    • Serve the Pumpkin Spice Latte Pancakes with a drizzle of the Maple Coffee Syrup and, if desired, a dollop of whipped cream or a sprinkle of powdered sugar.
